Why Growers Choose King Trumpet
Every other oyster is grown for its caps. King Trumpet is grown for the stem — a thick, dense column of white flesh with a texture close to scallop or abalone, which is why it is the default mushroom on serious vegetarian menus. Sliced into rounds and seared hard, it holds its shape and browns like a piece of meat.
It is also the oyster that most rewards good airflow. Fresh air exchange is not a nice-to-have here: in high CO2 the stems stretch tall and thin while the caps stay tiny, giving you a bag of pale drumsticks instead of the squat, heavy fruits you want.
