Brown Beech Liquid Culture Syringe (10cc) — Hypsizygus tessellatus, first-generation (G1) isolated genetics from Myco Labs. Known in Japan as Buna-shimeji and sold as Brown Clamshell, this is the darker of the two beech mushrooms we carry: small tan-brown caps with faint marbling, on clean white stems, growing in tight bouquets.

Why Growers Choose Brown Beech
Brown Beech is a texture mushroom. The caps are small and the stems firm, and both stay pleasantly crisp through cooking rather than going soft the way an oyster does — which is exactly why it turns up in stir-fries, clear soups and pan sauces where you want something with bite. The flavor is rich, mildly sweet and distinctly nutty once heat has been applied.
That last part matters. Raw Beech mushrooms are genuinely bitter, and the bitterness disappears completely with cooking. This is not a mushroom to sample from the tub, and it is not one to serve raw in a salad.
