What does ABM taste like?
Sweet and nutty with a pronounced almond or marzipan character, which is where the "almond mushroom" name comes from. The aroma concentrates considerably when dried, and dried ABM is commonly ground into powder or simmered rather than cooked fresh like a culinary Agaricus.
Does ABM need a casing layer?
It is strongly recommended. ABM is an Agaricus, the same genus as Portobello and white button, and members of that genus generally need a moist casing layer of peat and lime over the colonized substrate to pin reliably. Apply about an inch once the substrate is fully run, keep it damp, and let the mycelium recolonize into it before dropping into fruiting conditions.
What substrate should I use for ABM?
Rye berries or other grain make excellent spawn, and from there you can go to either hardwood or a manure-based bulk mix. That flexibility is unusual — most species in this catalog commit you to one or the other. Manure-based substrate is the more traditional route for Agaricus species.
How humid does ABM need to be?
Higher than most. Colonization wants 90–95% relative humidity, which is above what Shiitake, Lion's Mane or the oysters require, and fruiting holds at 89–93%. If your incubation space runs dry, this is the species most likely to stall on you.
