How to Grow Lion's Mane Mushrooms: A Complete Guide

Lion's Mane (Hericium erinaceus) is the gourmet species we recommend to first-time growers more than any other. It fruits at ordinary room temperature, it has no gills to drop spore dust across your kitchen, and it forgives the two mistakes beginners make most — inconsistent misting and a room that swings a few degrees. This guide covers all three ways to grow it, from opening a ready-to-fruit block on your counter to running your own cultures into supplemented hardwood blocks.

The short answer: Lion's Mane grows on sterilized, supplemented hardwood sawdust — not straw, and not the manure-and-coir substrate used for dung-loving species. Colonize at 70–75°F for 10–14 days, then cut the block, drop the temperature to 60–75°F, keep humidity high, and give it plenty of fresh air. Pins appear within 5–10 days and are ready to harvest 4–7 days later, while the spines are still short and bright white.

Pick your starting point first

Almost every problem new growers run into comes from starting further back in the process than they meant to. There are three genuine entry points, and they are not harder versions of each other — they are different projects with different equipment requirements.

What Lion's Mane is, and where it grows in the wild

Lion's Mane is a toothed fungus rather than a gilled one. Instead of a cap and stem, it forms a single dense white cushion with spines flowing downward off it — which is why it also goes by hedgehog mushroom, pom pom mushroom, and monkey head. Those spines are its spore-bearing surface, and they are the main thing you watch when judging ripeness.

In nature it is a wound parasite and late-stage decomposer of hardwoods across temperate North America, Europe, and East Asia. It fruits from wounds, broken limbs, and the cut ends of dead and dying beech, oak, maple, walnut, and sycamore, usually well off the ground on standing trunks rather than on the forest floor. Fruiting season in most of the US runs from late summer through the first hard frosts of fall, which tells you something useful for cultivation: it is a cool-weather fruiter that responds to a temperature drop, not a tropical species that wants heat.

Two practical consequences follow from that wild habitat. First, its diet is wood — lignin and cellulose from hardwood, not the straw or manure that oyster and dung-loving species prefer. Second, it evolved fruiting in open air on the side of a trunk, which is why it is unusually sensitive to stale, CO₂-heavy air in a closed chamber. More on that below, because it is the single most common cause of a Lion's Mane grow that looks strange.

Method 1: Growing from a ready-to-fruit kit

A spray-and-grow kit is a block that has already been sterilized, inoculated, and fully colonized. Everything where sterile technique matters happened in a lab before it shipped. Your job is only to trigger fruiting and keep the exposed surface from drying out.

  1. Cut a single slit. One clean slit across the face of the block, roughly two to three inches. Lion's Mane does not want the multiple cuts you would give an oyster block — it fruits best as one large cluster from one opening. That shift from sealed bag to fresh air is the fruiting trigger.
  2. Mist the cut face once or twice daily. You are raising humidity at the surface, not watering a plant. A fine mist that beads and evaporates is right; standing water pooling in the slit invites bacteria.
  3. Give it indirect light, about 12 hours a day. Ordinary room light or a north-facing windowsill is plenty. Mushrooms use light as a directional signal, not as food, so direct sun does nothing but dry the block out.
  4. Keep it between 60 and 75°F. Room temperature in most homes is fine. Cooler slows things down; much warmer pushes the block toward stress and bitterness.
  5. Harvest, rest, repeat. Twist and pull the whole cluster off in one piece. Stop misting for about a week so the mycelium can rebuild reserves, then resume for the next flush.

Expect small white knots on the cut face within one to two weeks, then rapid growth. Most 5 lb blocks give two to three flushes totalling 2–3 lbs wet weight, with the first flush by far the largest. Method 2: Growing from grain spawn

Once you want more than one block at a time, colonized grain spawn is the efficient path. You are buying past the riskiest step — the grain sterilization and inoculation that most home contamination traces back to — and doing only the bulk stage yourself.

Get the substrate right

This is where most Lion's Mane failures start. Lion's Mane is a hardwood species, so it needs a supplemented sawdust substrate, and that substrate must be sterilized, not pasteurized. The distinction matters: pasteurization at around 160°F is adequate for low-nutrition straw or coir, but a supplemented sawdust block is rich enough that any surviving bacterial endospores or mold will outrun your mycelium. Sawdust blocks need a pressure sterilizer at 15 PSI, typically two to two and a half hours for a 5 lb block, cooled fully before inoculation.

Spawn, colonize, fruit

  1. Spawn at 10–20% by weight. Roughly one pound of colonized grain to every five to nine pounds of sterile sawdust substrate. Higher spawn rates colonize faster and crowd out contaminants, which is worth the extra grain on your first few attempts.
  2. Mix in front of still, clean air. Work inside a still air box or in front of a flow hood, wipe everything down with 70% isopropyl, and break the grain up thoroughly so it is distributed evenly through the block rather than sitting in clumps.
  3. Colonize at 70–75°F in the dark. A filter-patch bag holds the gas exchange it needs. Expect full colonization in 10–14 days — Lion's Mane is faster than shiitake and slower than oyster.
  4. Let it consolidate for 3–5 days. Once the block is fully white, give it a few more days. A consolidated block resists contamination and fruits more evenly than one you cut the moment it turns white.
  5. Cut and fruit. One slit, drop into fruiting conditions, and manage it exactly as a kit from that point forward.

Method 3: Growing from liquid culture or agar

This is the full cultivation cycle, and it is the only route that lets you keep a strain going indefinitely, clone a fruit you liked, and produce spawn at whatever scale you want without buying it. It also demands real sterile technique — a still air box at minimum, ideally a flow hood.

The sequence runs: liquid culture or agar plate → sterilized grain → colonized grain spawn → supplemented sawdust block → fruiting. Inoculate sterilized grain jars or bags with 3–5 cc of liquid culture per quart, shake at roughly 30% colonization to distribute the mycelium, and let the grain finish in 10–14 days at 70–75°F. From there you are back to Method 2.

A note specific to this species: Lion's Mane cultures are noticeably more variable than oyster cultures. Some isolates fruit into tight, dense pom-poms and others sprawl into loose, coral-like growth even under correct conditions. That is genetics, not technique. If you are running agar, take the time to isolate from a fruit whose form you liked — it makes more difference with Hericium than with almost any other cultivated species.

Fresh air deserves its own paragraph because it explains the strangest-looking Lion's Mane problem. In still, CO₂-rich air the fungus abandons the dense pom-pom form and grows branching, antler-like, coral-shaped structures instead — sometimes beautiful, but a fraction of the yield and a sign the block is suffocating. If your fruits look like white coral, you need more air movement, not more humidity. In a monotub or tent, that means more frequent fanning or a genuinely open FAE port; on an open counter it is rarely an issue at all, which is part of why kits fruit so reliably in ordinary rooms.

Harvesting at the right moment

Lion's Mane has a narrower harvest window than most growers expect, and picking late is the most common way to spoil an otherwise perfect grow. Harvest while the cluster is bright white and the spines are still short — under about half an inch. Once spines lengthen and the surface turns cream, yellow, or tan, the flavor goes bitter and the texture softens. It is still edible; it is just no longer the mushroom you grew it for.

Twist and pull the whole cluster off at the base in one motion rather than cutting partway up, which leaves a stub to rot. A clean pair of harvesting scissors helps on tightly attached clusters. Quick tell: press a fingertip gently into the cluster. Firm and springy means harvest now. Soft, spongy, or slightly damp-feeling means you are a day or two late.

Storing and cooking your harvest

Fresh Lion's Mane keeps about a week in a paper bag in the refrigerator — never a sealed plastic bag, which traps moisture and turns it slimy in two days. It dries exceptionally well and rehydrates better than most gourmet species, so a dehydrator run at a low temperature is the right move for anything you will not eat within the week. In the pan it behaves like seafood, and the technique that unlocks it is dry-searing. Tear the cluster into strips rather than slicing, put them in a dry hot pan with no fat at all, and let the water cook out until the edges brown. Only then add butter and salt. Done that way it develops a sweet, faintly briny flavor and a shredded-crab texture that holds up in crab cakes, rolls, and chowders. Skip the dry sear and add fat too early and you get something steamed and rubbery, which is why people who tried it once and were unimpressed usually tried it wrong.

Why is my Lion's Mane growing like coral instead of a pom-pom?

Too much carbon dioxide and not enough fresh air. Lion's Mane evolved fruiting in open air on the side of a hardwood trunk, so it is more sensitive to stale air than most cultivated species. In a closed tub or tent it responds by branching into antler or coral shapes instead of forming a dense cushion. Increase fresh air exchange — fan more frequently, widen the opening, or move the block into open room air. Humidity is not the problem here, and raising it will make things worse.

Can I grow Lion's Mane without a pressure cooker or sterilizer?

Yes, if you start from a pre-colonized block or an all-in-one bag. Both arrive already sterilized and inoculated, so there is nothing left for you to sterilize. You only need a pressure sterilizer if you are preparing your own grain or supplemented sawdust from raw ingredients, because those are nutritious enough that pasteurization will not hold contaminants back.
